Chimichangas (Whole Meal Recipe)


These were easy and delish- absolutely delish. It made six Chimichangas, which was perfect because there was one for each person and some for seconds. All eaten very quickly.
Remember that though the steps might look hard, they are super easy. For example, you can do something while you boil the chicken.
My son and daughter who are not fond of spicy food, ate this up, esp my son. My daughter was so proud she helped stir some of the ingredients. It was a beautiful way to have a great sit down family meal. A tradition I hope to keep.

Makes 6 Chimichangas

Ingredients:
2 Chicken Breasts (Yes, free range! hormone free!)
1 Tsp Curry
1 Tsp Powdered Ginger
Water

First Steps:
1. Boil water
2. Then add the dry ingredients and stir
3. Take the chicken breasts, and cut them up into bite sizes and put in the boiling water. I boiled them for a long time, about 30 minutes to make the meat very soft. I did this the night before while I was making that night's dinner.
4. Remove and cool

The rest I did the next day-

Ingredients:
-The chicken from above, shredded with your fingers (super easy and kids can help with this)
- 2/3 Salsa
- 1 Tsp of Whole Cumin
- 1 Tsp of Curry Powder
- 1 Tsp of Powder Ginger
- 1 1/2 Cup Shredded Cheese
- 1/2 a chopped onion
- 2Tbsp Melted Butter
- 6 Whole Wheat Tortillas
- Brown Rice, cooked, as a side
- White Corn, cooked, as a side

Steps:
1. Preheat the oven to 400 degrees
2. In a bowl, add the salsa, cumin, ginger, curry, and chopped onion
3. Have you or your kiddo stir it
4. Add the shredded chicken and stir
5. Add 1 Cup shredded cheese and stir
6. Get a baking sheet out, cover with tin foil, and spray with Pam
7. Lay out your 6 whole wheat tortillas and fill evenly with the chicken filling
8. Wrap them up like burritos
9. Use a brush and brush the butter on top of the Chimichanga
10. Sprinkle the remaining cheese on top of each one
11. Put in the oven and bake for 25 minutes
12. Cook your brown rice and corn now
13. Take the Chimichangas out and let cool a little bit
14. Serve everything, the Chimichanga, brown rice and corn and enjoy!

Berry Warm Muffins



So, it is suppose to rain outside today and it is a little bit colder than normal, so I decided to bake something warm with my kids. My son really wanted to put the whole wheat berry flour in. This is very good and hearty because of the wheat flour.
I hope that it is something that you enjoy!

Makes 2 dozen (24) muffins


Ingredients:
- 6 Tbsp Butter
- 1 1/4 Cup Sugar
- 4 1/2 Tbsp Honey
- 2 Eggs
- 2 Tsp Baking Powder
- 1 Cup White Flour
- 1 Cup Wheat Berry Flour
- 12 Oz Frozen Blackberries
- 1/2 Cup Milk

Steps:
1. Preheat Your oven to 375 Degrees
2. Take a fork and cream the butter, then add the sugar, cream together, then add the honey and cream together (its important for consistency that you do it like that)
3. Put the mixture in an electric mixer and then mix on lowest setting.
4. Then add the eggs and mix, make sure that you throughly mix it
5. Add the baking powder, flour and mix again (on a higher setting this time)
6. Add the milk, throughly mix again
7. Add the blackberries and throughly mix again
8. Yes, I know it is purple, but that is ok! That are going to taste super yummy!
9. Put the cupcake liners in the tin, and fill up each cup about 3/4 the way
10. Put in the oven for 25 minutes
11. Pull out, let cool for a few minutes, and serve warm.

Don't forget to lick the spoons and bowls while in the oven!

New Style Breakfast Burrito For Lunch



An easy thing to do, a great spin on normal breakfast burritos. You get your veges in as well. My son ate it up super fast. Hope you enjoy!

Ingredients:
- 4 Eggs
- 5 green Onion Stalks
- 1 Celery Stalk
- 1 Cup shredded carrots
- 1 Avocado
- 3 Whole Wheat Tortillas
- Salsa to taste
- Garlic Salt, to taste
- Black Pepper, to taste
- Curry, to taste
- 1 Roma Tomato, diced
- 1 1/2 Pound Beef

Steps:
1. Crack 4 eggs, and make like you normally make eggs, without salt or pepper
2. Cut the scallions (green onions), and celery and measure the carrots
3. While cooking the eggs, sautee the scallions, celery and carrots
4. Add the beef into the sauteed mixture and cook
5. Then add the garlic salt, black pepper, and curry to taste
6. Take both of heat
7. Dice a roma tomato and add to the beef mixture
8. Lay out three plates with the tortillas on it
9. Evenly put the eggs on the middle of each tortilla, than put some of the beef mixture on, and then the avocado and then the cheese to taste (add salsa if you wish)
10. Fold into a burrito, or eat tostada style with it open.
11. Enjoy!!!



You will have beef left over, so you can use it other ways as well. Yummy and you get all your veges in.
