Strawberry Almond Healthy Shake


So I woke up this morning want more than toast for breakfast. If you eat the toast, it does not have as much nutriention and I would eat it like crazy.
I loved this idea just throwing things together quickly and have a shake. I also have been trying to stay away from ice cream and this has been helping. This is SO good- I drank it all in one setting every time I have made it. 

Makes 4 cups

Ingredients:
2 c frozen strawberry 
2 tbsp  chia seeds 
1/4 c almonds,crushed 
1 cup milk/soy milk 


Directions:
1. Cut frozen strawberries into a measuring cup until you get to 2 cups
2. Put into Blender
3. Add Chia seeds
4. Take almonds and crush them and then add to blender
5. Add milk to the blender
6. Blend and enjoy!

Homemade Meatballs


This is SO good. It will have you wanting to calling dibs on your meatballs! We had so many, we were able to stretch it out over many meals for a family of five! Such a treat. 
We all definitely loved this and this may have to become a weekly staple in our house! Yum!

Serves: 42 meatballs

Ingredients:
1 1/2 pounds beef
1/2 Cup Mozarella Cheese
1/2 Cup Bread Crumbs
1 Tsp Italian Seasoning
1/2 Tsp Salt
1 Tsp Mustard
1 Large Egg
1/2 Large Onion
4 Cloves Garlic

Directions:
1. Defrost the meat if it is not already
2. Grate the cheese
3. Cut the onion and garlic
4. Preheat the oven to 400 degrees
5. In a bowl add the onion, garlic, egg, mustard, bread crumbs, italian seasoning, salt and mix well.
6. Take the meat and in your hands take it apart to make it easier to mix together.
7. Mix the meat and the mixture together.
8. To make even meatballs, use a table spoon to measure your meat. Take the tablespoon of meat and roll lightly into a ball and put on a greased pan.
9. Put in the oven for 20 minutes. 
10. Put over pasta directly or in sauce.
11. Enjoy.

Very Cherry Cocoa Cookies


I have not made cookies in a while! This is yummy, and gives you an excuse to use cherries. We found this this great deal at H Mart for cherries- we found them $5 for 4 pounds of cherries. Which is $1.25/pound- which either California or here is a great deal. We pitted the cherries and froze the cherries and used some in the recipe. Cherry and chocolate seem to go together well too, so why not? 
Pretty easy- the kids like to get involved- which means taking some of the ingredients as a pre-snack. :)

In the bottom picture below, my daughter pretended to tell me to say, "Shh, don't tell mum- I am taking a cookie!" How funny! 
These were delish and we ended up making so many that we shared with others.

Ingredients:
2/3 cups Ghiradelli Baking Chocolate Chips
1 Cup Dark Sweet Cherries, pitted and diced
1 large egg
3 1/2 cups flour
1-1/3 cup Soy Milk, Vanilla
1 cup sugar, less if you like it less sugary
1 tbsp butter

Directions:
1. Pit and dice the cherries- 1 cup is after it is diced.
2. Put the egg in the bowl and whisk it
3. Add sugar butter and 1/3 cup soy milk and stir
4. Add in the rest of the soy milk
5. Add in the cherries and chips.
6. Add in the flour one cup at a time until you hit 3 1/2 cups
7. This batter will be very sticky.
8. Preheat oven to 350 degrees
9. Oil your pans
11. Use a table spoon and spoon out heaping spoonfuls onto the baking sheet.
12. Bake 18-20 minutes
