This is ubber delicious and LIGHT! Crisp apples, tangy mandarins, very light spice, substance!
It was 106 degrees here in D.C. today, so I needed something hearty, full of protein, but also light. As shown above, it makes 4 servings :) Also, you can chop, make and eat this in 30 minutes or less! Great in a time pinch.
My son Avi loved it so much he asked me to take a picture of him because wanted to show you! He also told me he wanted to look like a comic book. :) His proud super power is that he can use chopsticks at 6 years old.
If your child can't use chopsticks you can connect them by a rubber band at the top by wrapping one chop stick at a time (with the same rubber band) and then wrapping them together (with the same rubber band). It was something a restaurant in Berkeley California did for my kids and they wanted to learn afterwards and now they can use chopsticks! Or you can just use a fork, of course.
Ingredients:
2 packs Zaru Soba Japanese Noodles
1 bunch green onions
4-6 slices of apple
11 ounce can Mandarin Oranges
6 ounces chopped chicken, already cooked
2-2 1/2 tsp soy sauce
2 swigs of garlic powder
1 swig of ginger powder
2 swigs of vegetable seasoning
1 1/2 tsp- 1tbsp EVOO
Directions:
1. Chop your green onions and apple.
2. In a skillet, saute the green onions (without oil) in a pan.
3. Add in chicken and stir.
4. Add in mandarin oranges and stir.
5. Then add in 1 tsp soy sauce, swig of garlic powder and vegetable seasoning, stir.
6. Add in the apple.
7. Put this skillet to the side to let it cool while you boil the noodles- the sauteing should take you no more than 5-7 minutes total.
8. Boil noodles for 4-5 minutes and drain.
9. Put the noodles in a bowl and add the EVOO, 1-1/2 tsp soy sauce, swig of garlic powder, swing of ginger powder, and swig of vegetable seasoning and stir.
10. Add the skillet ingredients and you have your dinner!
*Swig to me means to tasting. If I had to measure I would guess 1 tsp or so=swig.

Man that looks good! Good way to get kids to eat their healthy foods, too.
Fabulous - Love the photo of Avi! And I like the chopstick suggestion as well.
