I have an admission- a guilt really. I love these cookies. I could eat them all day long.
It could be safe to say that these may place me in chocoholics anonymous soon!
My excuse is that I added oatmeal, which is good for you.
I added peanut butter too, which is also good for you.
I am just saying :P
With this recipe, you can stock up for the family or use these for a potluck.
I use them for many things- like rewards for the kids. Also, for me during those mid day snacks that I need to sneak every day for my sanity.
As far as ingredients go, I use chunky peanut butter because it helps add peanuts to it.
You can easily subsitute almond butter if you are allergic, like my beautiful nephew is.
Speaking of which, I got to listen to my 5 year old nephew Elijah rap to me:
"Where is my chair,
where is my chair."
as he pranced in his kitchen 3000 miles away in Portland, Or.
They ate dinner, I made dessert.
It works out well.
I can always say:
"Auntie is making cookies, you should eat all your dinner!"
Hopefully it motivates them to eat.
Yay for Skype- to be able to chat with them so far away.
Makes: 8 dozen
Ingredients:
4 eggs
2 cups chocolate chips
1 cup chunky peanut butter
1 cup sugar
1 cup butter
3 cups flour
6 cups Quaker oats
2 tsp baking soda
2 tsp cinnamon
Directions:
1. Preheat oven to 350
2. Break eggs and butter- mash together, add sugar in a bowl
3. Add in baking soda, cinnamon and cocoa chips and peanut butter.
4. Add in the flour and oatmeal, mix.
5. Using a big soup spoon, make scoop up the mix and with your hands, make little balls and place on a greased cookie sheet.
6. Bake for 10 minutes and take out and let cool.
7. Serve on a plate and enjoy with a glass of milk!
